Hungry Souls: Broccoli Salad


Hey there! In this column, I hope to present ideas for dishes that anyone could make and bring to class with an emphasis on easy, inexpensive, AND the healthy side. You probably WON'T see a lot of desserts... just saying. I promise NOT to bombard you with a lot of recipes as this is NOT a food FB page... probably about once a month.... unless you absolutely clamor for more!

Let's get this started with the salad that I made this last Saturday.... Inexpensive.... tasty... and I have to tell you... was gobbled up.

NOTE: I tripled this recipe for our group. Originally this was made with Broccoli florets and you can do that, too, but I like the ease of the broccoli slaw AND for those who THINK they don't LIKE broccoli.... the broccoli slaw fools them every time!!

Broccoli Salad with Grapes and Pecans
Yield: 6 servings
1/2 cup mayonnaise - light or regular
2 tablespoons ORANGE JUICE
2 tablespoons sugar
3 drops hot sauce (optional of course!)
1/4 teaspoon salt
1 bag Broccoli slaw ( 4 cups) - look for it in the produce section with the bagged salads. Don't be afraid to ask the supermarket personnel.
2 cups red or green grapes, halved
1/3 cup finely diced red onion
1/2 cup chopped pecans
Stir together the mayonnaise, orange juice, hot sauce, salt, and sugar in a large mixing bowl. Add the broccoli slaw, grapes, and onions. Stir well to coat with the dressing. Stir in the pecans, reserving a few for sprinkling on top. Chill in the refrigerator until ready to serve. Stir again just before serving. Enjoy!
